The Quest to Bake the Perfect Apple Pie - Round 2

I'm getting much, much closer now:



After referring to other recipes and conversing with fellow cooks in the family/friends ring of mine, this is the result. The apples weren't an applesauce, but still tasted great. They weren't overwhelmingly sweet, but the taste of the apples with the cinnamon and other spices was nice. I think I have the apple part down.

The crust is what I need to work on. This time, I din't pre-bake the crust, so the bottom crust was so-so. The top crust, as seen in the picture, is rather burnt. I think this is because I had the rack in the oven way too high than it needed to be. I added an egg white wash and sprinkled sugar over the top of the pie before I put it in the oven as well, so that might also result in the burnt part of this pie. So, I'm going to apply this when there is about 10-15 minutes left to baking. The taste of the crust was better; it didn't taste like the other crust at all in Round One (which almost tasted too powdery), however, I feel as if the crust could be flakier.

I'm so close, I can almost taste it.
